Welcome to the Cool Climate Oenology & Viticulture Institute (CCOVI) - offering you quality continuing educational opportunities since 1997.

 

CCOVI is located within Inniskillin Hall at Brock University in the heart of wine country.  It's state-of-the-art facility includes the first Teaching Winery, Viticulture, Oenology and Sensory Science Laboratories.  Inniskillin Hall is also home to the Canadian Wine Library - a permanent, revolving collection of Ontario's finest VQA wines judged ageable by its Directors. The Wine Library also includes a Vinotheque of wines made by students during their undergraduate and graduate programs.  Total cellar capacity = 43,000 bottles!

Wine & Spirit Education Trust® - WSET

 

The most highly respected wine certification available. Whether you're in the trade or a wine enthusiast the WSET® systematic approach to winetasting has a course for you.

 

Level 1 - FOUNDATION in WINE

Introductory course for those new to wine education. Learn the basics of grape varieties, health, safety and legal issues as well as food and wine pairing.

One day course (9:15-5:00 p.m.) - Check "COURSE LISTING" for dates.

Includes all course materials, wine and Level 2 WSET Certification and lapel pin upon completion.

 

Level 2 - INTERMEDIATE CERTIFICATE in WINE & SPIRITS

Geared to those employed in the drinks industry or anyone wishing to broaden their knowledge of wine and spirits in a structured way.

Evenings (Course will run annually in September and again in April.  Duration: 9 weeks) - Check "COURSE LISTING" for dates.

Registration Fee:  $650.00

Includes all course materials, wine and Level 2 WSET Certification and lapel pin upon completion.

 

Level 3 - ADVANCED CERTIFICATE in WINES & SPIRITS

Intended to provide in-depth knowledge of a wide range of wines and spirits. This qualification is also suitable for the wine enthusiast wishing to build on knowledge gained at Level 2.

Evenings (Course will run annually in January.  Duration: 14 weeks) - Check "COURSE LISTING" for dates.

Registration Fee:  $1,100.00

Includes all course materials, wine and Level 3 WSET Certification and lapel pin upon completion.


 

Continuing Education Certification courses for the wine enthusiast or those looking for suitable prerequisites for advanced wine education.

 

Introduction to the Wines of Ontario

January - March (Annual)

Duration:  9 weeks

Cost:  $250.00

Course Instructor:  Christopher Waters

Includes the Wine Council of Ontario Certification.

This is a special interest course focused on the wines of Ontario - how they are grown and made.  Become familiar with VQA wines and the viticultural areas in which they are grown.  Upon successful completion students will receive the Wine Council of Ontario Certification.  This course may also be used a prerequisite for entrance to some Sommelier programs.

 

Certification Program in Wine Sales & Service

March - May, 2010 (Annual)

Duration:  9 weeks

Cost:  $175.00

Course Instructor:  Dr. Linda Bramble (tbc)

Includes the Excellence in Winery Sales & Service from the Wine Council of Ontario

 

Wine Appreciation Classes

 

Wine Appreciation I - Exploring Varietals

September - December (Annual)

Duration:  12 weeks

Cost:  $300.00

Course Instructor:  Christopher Waters

A special interest course focused on tasting wines by "variety".  Learn and improve your skills at distinguishing between Chardonnay, Riesling, Sauvignon Blanc, Merlot, Pinot Noir, Cabernet Sauvignon, etc.  Each week you will have a different varietal focus in order to, for example, taste the difference between a Riesling made in Germany vs. a Riesling made in France.  This is your opportunity to train your palate in varietal recognition while having the opportunity to try a number of wines from around the world.

This course may also be used as a prerequisite for entrance into some Sommelier programs.

 

Wine Appreciation II - Explore the Wine Regions of the World

January-April,  (Annual)

Duration:  12 weeks

Cost:  $325.00

Bacchus: the International and Interdisciplinary Wine Conference


The door has officially closed on the 2007 Bacchus Conference but not before nearly three hundred passionate grape and wine delegates descended upon Brock University to experience all that is Bacchus!
